CRYSTAL CANDIES

We are a Melbourne based small business who travelled the world trying delectable morsels of food all over. We found these little moreish gems in the little town of Kyoto, Japan. Fell in love with them and ate a truckload whilst there. And here we are to share it with you! We love creating these beautiful gems and we hope you enjoy indulging in them. We have the largest assortment of flavours in Australia and we hope to keep inventing magic flavour combos for you to try. SO WHAT ARE CRYSTAL CANDIES? These edible gems date back to the Edo period in Japan when Agar agar was first invented. They were traditionally called 'Kohakutou' which translates to 'amber sugar'. They are crunchy on the outside and jelly on the inside. They will continue to crystallise the longer you leave them out to open air. We love ours super crunchy so we leave ours out for weeks to months until we can't wait anymore! Due to the nature of crystallisation, these beauties can take up to a week to crystallise and a little bit longer for the centre filled crystal candies. Like all good things take time.....it will be worth it! However, if they arrive to you a little bit sweaty from the heat, simply place them out to open air for a few days up to 2 months and they will keep crystallising over time. Try different waiting periods to see how crunchy you like them! Each crystal is delicately hand crafted to create one of a kind gems so they will all vary in sizes, shapes, colours and designs. But that's what makes them unique! Each batch are designed to have a mix of classic and unique flavour combos.
